Skinny pizza with prosciutto, mozzarella and leaves

Cut the calories in your favourite fast food with this easy pizza recipe using light mozzarella and a tortilla base

Method

  1. Put all the sauce ingredients in a small pan, season well and simmer for 10-12 minutes until thickened. Blend until smooth.
  2. Put the tortillas on baking sheets and spread with the sauce. Add the prosciutto and mozzarella. Season. Grill for 2 minutes until the cheese has melted. Top with salad and drizzle with the balsamic and olive oil.

    Really nice! Just had this for lunch. Great alternative to a fat laden pizza! I added a couple of jarred roasted red peppers to the sauce mix, and also black olives and a sliced green chilli to the topping...and it was delish! make sure you have a really good non-stick tray though, or it will stick! Also, make sure the mozzarella is well drained, or you end up with a soggy bottom...and no-one likes a soggy bottom do they! :o) Really nice though- this will become a regular "treat" when I fancy pizza, but can't afford the poundage!

    The sauce is absolutely delicious & the star of this show. i'm not sure i'm convinced by the tortilla as a satisfying alternative to a normal base, its just too floppy! definitely agree with draining the mozzarella well. also, i did this twice and on the second time put the wrap in the oven on its own to crisp up a bit first, would definitely recommend

    Made one (to share) according to the recipe - my husband requested a whole one to himself next time. Easy and delicious. I did toast the tortilla in the oven first to firm it up, as someone had suggested.
