Sticky soy pork with watermelon
A sticky treat for two, these pork skewers aren't too heavy thanks to the watermelon

- Heat the grill to medium-high. Toss the pork with the ketjap manis in a bowl then thread onto four skewers. Grill, turning and brushing with any leftover ketjap manis until the meat is just cooked through, browned and sticky.
- Meanwhile, mix the sesame oil, garlic, lime juice and sugar then season with salt. Peel then thinly slice the watermelon. Toss the melon and coriander into the dressing and leave for 5 minutes to steep. Serve with the pork and its sticky juices, scattered with the spring onions and sesame seeds.

- 1 pork tenderloin fillet, about 350g, trimmed and cut into chunks
- 2-3 tbsp ketjap (Kecap) manis (from some supermarkets or Asian grocers) or add a little sugar to soy sauce
- 1 tsp sesame oil
- 1 garlic clove , crushed
- 3 tbsp lime juice
- 1 tbsp golden caster sugar
- 800g watermelon wedge, room temperature
- a handful coriander , roughly chopped
- 4 spring onions , shredded
- 1 tsp sesame seeds , toasted (optional)
