Sticky soy pork with watermelon

A sticky treat for two, these pork skewers aren't too heavy thanks to the watermelon

Method

  1. Heat the grill to medium-high. Toss the pork with the ketjap manis in a bowl then thread onto four skewers. Grill, turning and brushing with any leftover ketjap manis until the meat is just cooked through, browned and sticky.
  2. Meanwhile, mix the sesame oil, garlic, lime juice and sugar then season with salt. Peel then thinly slice the watermelon. Toss the melon and coriander into the dressing and leave for 5 minutes to steep. Serve with the pork and its sticky juices, scattered with the spring onions and sesame seeds.

    Avani, don't be ridiculous. There's very little fat in this whatsoever. By the way, for anyone looking for it, Tesco stock ketjap manis. It's normally where all the sushi ingredients are (i.e. not with the normal soy sauces).

  • 1 pork tenderloin fillet, about 350g, trimmed and cut into chunks
  • 2-3 tbsp ketjap (Kecap) manis (from some supermarkets or Asian grocers) or add a little sugar to soy sauce
  • 1 tsp sesame oil
  • 1 garlic clove , crushed
  • 3 tbsp lime juice
  • 1 tbsp golden caster sugar
  • 800g watermelon wedge, room temperature
  • a handful coriander , roughly chopped
  • 4 spring onions , shredded
  • 1 tsp sesame seeds , toasted (optional)
