Glazed apple tart

This gorgeous apple dessert with crisp pastry base and vanilla apricot glaze, is simple and quick to make yet looks stunning

Method

  1. Heat the oven to 200C /fan 180C/gas 6. Roll the pastry out very thinly. You need to go a lot thinner than is usual - about 2mm. Use a plate of about 23cm as a template to cut a circle of pastry. Transfer the pastry to a baking sheet lined with baking paper. Prick all over with a fork and chill for 30 minutes.
  2. Cut the apples into very thin slices and lay over the pastry in concentric circles. Go as close as you can to the edge of the pastry: you don't want a border.
  3. Bake for about 30-40 minutes or until the apples are tender and the pastry crisp and cooked through.
  4. Leave until just warm, then brush the apples with warm vanilla apricot jam to glaze.
