Quick beef & broccoli one-pot

Method

  1. Heat the oil in a frying pan, add the nuts and toss for a few secs until lightly toasted. Set aside.
  2. Season the steak strips with plenty of pepper and stir-fry over a high heat for 1-2 mins to brown. Set aside with the nuts. Tip the broccoli and celery into the pan and stir-fry for 2 mins. Pour the stock over, cover and simmer for 2 mins. Meanwhile, mix the horseradish and fromage frais together.
  3. Return the steak to the pan and toss with the veg, then sprinkle over the nuts and serve with the creamy horseradish. Great with mashed potatoes.

Making it with more veg

To make it with more vegetables add 2 sliced or crushed garlic cloves and more vegetables, such as sliced carrot, mushrooms, cabbage or leeks.

Making it Oriental

Season the steak with 1 tsp Chinese five spice powder. Use olive oil mixed with a little sesame oil for stir-frying and replace the horseradish sauce with soy sauce.

    If you don't skimp on the meat and you use a good sirloin or fillet steak, this is by far the best recipe I have found on this website. The mixture of the roasted cashews, broccoli & steak, with the horseradish side is fantastic. I've always made it with creamy mash as well. A proper family favourite. The picture doesn't do this meal justice.

    This was delicious. Kept to the recipe and used hip steak from the butchers. Had it with "special" mash : sweet potato / normal spud / parsnip / grated carrot, so got all our five a day in one meal. Will def be having again - thumbs up!

    AC - You could sub the fromage frais with creme fraiche i have done this with many recipes in the paste at a very big push some mascarpone with a little milk to loosen it up

    I cooked this last saturday and used creme fraiche. My friend Barry came round for an evening meal. Decided to add extra veg such as carrot and leeks plus mushrooms. Just aswell I did bcos when it came to dish up our other friend Gary turned up. There was plenty to go round. We had a fun evening. Not too keen on the nuts though.

    Everyone was surprised at how tasty the veggies were. I usually don't like celery but it was lovely in this. Really quick recipe too, I'll defintiley be making this again

    I think it would be really helpful if the people who really didn't like a recipe said what it is they didn't like about it, if they know. It helps the rest of us to see either where they went wrong and suggest an alternative, or to see what we could do to tweak it so that we don't have the same problem.

    I love this recipe however i made quite a few tweeks, for example instead of using celery i fried mushrooms and onion then added the broccoli, a stock cube and cooked for a short time. i then added the beef for a couple of minutes. Then i added a dollop of creme fraiche. It tastes amazing!

  • 1 tbsp olive oil
  • 50g unsalted cashews nuts
  • 400g frying beef steak, cut into strips
  • 1 large head broccoli , broken into florets
  • 4 sticks celery , sliced
  • 150ml beef stock (from a cube is fine)
  • 2 tbsp horseradish sauce
  • 2 tbsp low-fat fromage frais
