Raspberry & apple crumble squares

Method

  1. Heat oven to 180C/160C fan/gas 4 and line a 20 x 30cm cake tin with baking parchment. Put the apple in a small pan with 2 tbsp water. Cook for a few mins or until the apple starts to soften.
  2. Meanwhile, make the crumble topping. Rub the butter into the flour, sugar and lemon zest until it resembles big breadcrumbs, then set aside.
  3. Beat the butter and sugar in a large bowl until fluffy, then gradually add the egg. Tip in the flour and milk, and continue to beat until everything is combined. Incorporate the apples then spoon the mixture into the tin, smooth the surface, then dot with the raspberries. Sprinkle over the crumble topping and bake for 45 mins or until a skewer inserted comes out clean, and the topping is golden.

    Left the crumble in the over for over an hour as it still hadn't set well. The top cooked nicely. Have just cut up the crumble into pieces and unfortunately it didn't sit well.

    I baked these and added the apples into the cake mixture - I notice the recipe has now been updated. These were a hit with all my family and soon vanished. I will definitely be baking these again.

    First time I made these without the updated method and put the apples at the same stage as raspberries and it worked fine! Lovely as a cake or a pud! Just trying them now to the updated method so fingers crossed! I used 2 apples both times.

    Gorgeous little cakey/crumble things.... Very easy to make, and even the kids thoroughly enjoyed these, even my VV fussy one!! Would be fantastic with some warm custard on a chilly autumn evening.

    this recipe is absolutely awesome. I made it for work and everyone loved it. It took longer to cook that stated in the recipe but it was wel worth the wait. Its so moist and light.

  • 125ml milk
  • 200g raspberries

  • 100g golden caster sugar
  • zest 1 lemon
