No-oven pizza

This superhealthy pizza, from Amanda Gould, is cooked in a frying pan making it the perfect food for camping

Method

  1. Heat the oil in a frying pan, then add the onion and garlic and cook for 5 mins. Tip in tomatoes and passata, and simmer for 5-10 mins or until the tomatoes are soft. Remove from the heat, stir in the basil, season, then allow to cool.
  2. Put the flour into a bowl. Make a well in the centre, add the olive oil then add 6-7 tbsp warm water or enough to make a soft dough. Tip the dough onto a lightly floured surface and roll out to fit a 22cm frying pan or make 2 small ones. Heat a glug of olive oil in the frying pan, then press the dough into the pan and cook over a medium heat for 8-10 mins or until the base is golden.
  3. Heat grill to hot. Spread the pizza base with the tomato sauce, scatter on the cheese and grill until it has melted and the base is golden at the edges. Serve immediately.

    Had a few disasters with this!! Mainly mixing the hot oil and passata so making oil fireworks!!! Turned out OK in the end though apart from the mess!!!!!

    Don't know about you, but I'm not used to packing a grill when I go camping... No-oven pizza?! Not entirely true.

    This works well on a BBQ just put the frying pan on BBQ or use foil (dont forget to oil it) step 3 "Heat grill to hot!" WHAT GRILL ! Oh well just turn it over. great camping food.

    Whenever I go camping I always get a niggling worry that I've forgotten something important. Now I know it's the grill I've been missing! How have I coped? Now to work out how to fit that into a 50l rucksack...or maybe I'll settle for some tasty calzone.

    A lot of camping hobs/stoves these days do have grills on them. To make toast mainly. I for one will definitely be giving it a go.

    Also, if you're planning the meal, why not weigh everything out before hand? Saves a lot of time! It's all about preparation! Call yourself campers? ;P
