Herby salmon & couscous parcels

Whip up a weekday meal in less than 30 minutes - this recipe is easily doubled too

Method

  1. Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.
  2. Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal - like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

Making in the microwave

Cook each parcel separately for 3 mins on High, then leave to stand for 2 mins.

Making it with chicken

Use 2 sliced skinless chicken breasts instead of salmon. Bake for 15-20 mins until cooked or microwave on High for 4 mins, then stand for 2 mins.

    Delicious. I added lemon and garlic to plain couscous. I used flat parsley as my herbs. I like the idea of pine nuts and peppers. Cant wait to have this again.

    Lovely recipe! The salmon was so moist! Rather than buying flavoured couscous, i added the zest of 1 lemon and 1 crushed garlic clove to standard couscous with a knob of butter onstead of oil which i always thinks adds a subtle richness. Only reason i gave it four was becauce i found the spring onion a bit overpowering, but that may well just be personal taste. Overall, it was fantastic and will definitely now be part of my repertoire!

    Just made the chicken version of this. Wanted very quick tea and the full thing was done and eaten in less than 20 mins! Just used a bag of Ainsley Harriot Lemon, Parlsey & Mint Cous Cous, added a bit of fresh mint and parsley and a tiny bit of rosemary. Only had asparagus and cherry toms so halved these and chucked in. Piled the raw sliced chicken on top, 5 mins in the microwave and it was ready. Was very skeptical of using micro to cook chicken as have never done this before but turned out very soft and tender and the whole thing was quite tasty.

    I made this for dinner tonight it was delicious! I didnt have lemon couscous so squeezed in some lemon juice and added some crushed garlic as recommended by @Hannah, added some chillis too. I put the finished dish on a bed of wilted spinach and served with broccoli. Fab!!

    Yum, this is delicious and SO EASY!!! I didn't have a packet of lemon and garlic couscous, so I used plain couscous and added quarter of a lemon (juice and zest) and a crushed clove of garlic. I also chopped 1 mushroom very small. It's stunning, you have to try it!

    This was delicious - I only had plain couscous so added garlic oil instead of olive, with a squeeze of lemon. Used parsley and that worked reaaly well.

    made this several time now - a very easy and quick weekday dinner, and also one that goes down very well at an informal dinner party. I've always followed this recipe exactly as I think it great - however I make the lemon and garlic couscous myself by adding zest and couple of teaspoons of juice and crushed garlic clove to the couscous.

    I made this last night and thought it was just ok. I don't see the point of cooking the couscous and then putting it in the oven. I would have saved time if I'd have put the salmon in the oven at the same time as I was preparing the couscous. Also I thought the salmon was lacking something, it's just plain salmon with a few herbs on top. I served it with the chunky guacamole from this site and that really lifted the meal for me.

    Made parcels of salmon and of chicken, both fab! The chicken has no colour so not as attractive, will probably flash brown top of chicken next time to make it look more appetising. So quick, easy and hadly any washing up and everyone loved it!!!

    Have made this twice and it is really easy and tasty. Didn't bother with flavoured couscous, too expensive and fresh lemon and garlic has more flavour.Used salmon steaks and cooked fish for 5 minutes longer.
