Ingredients

  • 110g pack lemon and garlic couscous
  • 200ml hot vegetable stock
  • 1 tbsp olive oil
  • handful chopped fresh herbs (parsley, plus thyme, tarragon or rosemary is good)
  • 4 spring onions, thinly sliced
  • 4 Sun-blush or sundried tomatoes, chopped
  • 2 salmon fillets, approx 140g/5oz each

Method

  1. Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.
  2. Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal – like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

Really enjoyed this quick, tasty recipe. Had plain couscous in the cupboard so used this instead - should've added some lemon zest to add to the flavour but will do this next time. Herb I chose was thyme and didn't think it went so well so will try another. Fillets were quite thick so needed almost 20 mins. Will definitely be cooking this one again!

Great recipe, very tasty & easy to make. I served this with the honeyed winter salad recipe (also from this site) which was lovely too.

Absolutely lovely. I added a few pine nuts which worked well and we were all pleasantly surprised at how tasty it was. My step son loved eating his tea out of the bag!

every one loves this in our house including kids aged 2 and 4 (easy for them to eat and they love it served in the paper) also easy to double up and serve chicken and fish in the same meal for different people.

A great recipe, and so easy to make for a mid-week meal.
I felt it needed a bit more veg though, so I served with sliced cucumber and grated carrot as a medium-sized garnish, and the freshness of those two veggies picked up the fish well.

This is a really tasty dish! Now one of our favourites and so easy to put together.

Very nice and easy to make. I used chicken, with a tbsp of soya sauce poured on the chicken before cooking. As a side dish I yoghurt mixed with a tsp of mint.

Very tasty recipe. Easy to make, I cooked it in the microwave, only took 5 minutes. Very filling and my daughter who is twelve loved it too!

Excellent recipe. Always popular with people. Fresh chopped coriander is a good addition to the couscous.

Really nice. This tasted lovely, light and fresh. Used some roasted peppers from a jar instead of tomatoes which worked well.

All ways a winner, very easy and very tasty.
If you don't have flavored couscous just add your own lemon rind and juice and some crushed garlic.

Very easy, quick recipe which makes the salmon really tender and tasty. Good midweek supper dish.
