Method

  1. Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.

  2. Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal – like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

So simple and tasty I'll definitely be making this again. I did prepare twice as much couscous as suggested though as I felt that one pack between two people wouldn't have been enough, but then again I didn't prepare any veg or salad to go on the side. Just a warning that this can get quite salty depending on the kind of stock and pre-flavoured couscous used so you might like to go easy on the salt when it comes to seasoning the meat.

This is a good recipe. I used mint parsley and lemon flavoured couscous, with extra mint from the garden. I also splashed a bit of wine on the salmon before folding up the bags, and was glad I did, because the couscous was slightly dry.

The fish was cooked to perfection. Followed recommendation above to serve with yoghurt mixed with garlic, fresh mint and cucumber. Really really good.

Really nice mid-week meal. I used plain wholemeal couscous and used veg stock and added a squeeze of lemon and a crushed clove of garlic. Herb-wise I had thyme, oregano & parsley in the garden and it worked well. The salmon took a little longer than stated but our fillets were quite thick. My 5 year old son loved the novelty of having "dinner in a bag"!

This was probably the easiest and tastiest dinner ive ever made !!didnt have any tomatoes but will definately be making again so will add some next time and think i might put some asparagus in the parcels for some extra vedge! yum

I liked the sound of this but had none of the ingredients! Instead I used bulghur wheat soaked in stock and the juice of an orange, and mixed in some sauteed sliced leeks and halved cherry tomatoes. I put fresh trout fillets on top and baked as directed. A couple of minutes less in the oven would have been perfect. Served with green beans and it was delicious.

Really delicious, and so easy. I didn't like the look of the paper bad though so took it out to serve. Will definately make again!

If you're cooking for one, as I was, make the cous-cous recipe as is, then use half with the salmon parcel and keep the other half to have the next night (perhaps with chicken this time) - or have it for lunch the next day with some roasted veg. I used lemon zest & juice, plus a chopped garlic clove to flavour my cous-cous and that was lovely. Super easy and lovely meal for mid-week dinner. Highly recommended!
