Ingredients

  • 500g potatoes, unpeeled and roughly chopped
  • 2 vegetable stock cubes
  • 1kg courgettes, roughly chopped
  • bunch spring onion, sliced - save 1 for serving, if eating straight away
  • 100g extra-mature cheddar or vegetarian alternative, grated, plus a little extra to serve
  • good grating fresh nutmeg, plus extra to serve

Method

  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.
  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

would add that I peeled the potatoes, and used small white onion in place of spring onions!

Lovely easy recipe- kids aged 5, 3 and 1 all enjoyed it- will make again, possibly with variations such as adding fresh dill (goes so well with courgette) or using a nice bit of blue cheese instead of cheddar?

I first made this soup because I had loads of courgettes left over. I added strong salad onions and also added 2 - 3 cloves of chopped garlic to the mix. I also used extra mature Welsh cheddar. It freezes well and I would definitely recommend it.

Made this a few weeks ago exactly as the recipe states. Its absolutely delicious!!! Making it again this week as my boyfriend who is not a soup fan loves it :)

I was looking forward to doing this as i have got a few courgettes that needed using up. However, despite following the recipe i felt it just tasted of potato. I added quiet alot of seasoning and mild chilli powder to make it something worth having. Very disapointed though.

I loved this recipe, i cooked it for the family at the weekend and the all said is was either 4.5 out of five or 5 out of 5.
I am going to cook it again really soon!

Really love this - great way to use up GIANT courgettes and agree with the comment that it's great not having to sweat veg etc. I don't generally add much salt to my food but I did find that salt was the way to combat blandness with this soup - maybe an even more matuer cheddar would have done the trick.

Can't believe a soup so simple to make could be so tasty. I left my soup a little bit chunky as my husband prefers it like that. Such a good way to use up courgettes.

This is surprisingly delicious, and very easy/lazy! I've never made soup without sweating the vegetable in oil before and I don't think I'll bother again after doing it this way, it's so much easier. I didn't have any onions so I used some garlic which worked well. I think I would peel the potatoes next time as some of the skin wouldn't blitz completely and it's effected the texture. I'm going back for seconds...

sorry didnt like it but ..i dont like courgettes much!!! hoping it was a way of me eating them.. i didnt like butternut squash, but made your pot n butternut soup on this site and loved it.. make almost every week n its not even winter!!!.. but a very easy recipe.. if i made again i would add garlic n chilli, so i could disguise the courgettes!!! lol

Absolutely gorgeous - the kids (3 and 4) didn't stop raving about it and I've struggled to get one of them to eat soup before. Will definitely be making this again!

Just made this to use our glut of courgettes, as I didn't have spring onions I softened white onions in butter then completed as per recipe. hope it freezes well.

Amazing soup and talk about timing the book hardly landed on my doormat before the courgettes were being weighed out!
