Ingredients

  • 500g potatoes, unpeeled and roughly chopped
  • 2 vegetable stock cubes
  • 1kg courgettes, roughly chopped
  • bunch spring onion, sliced - save 1 for serving, if eating straight away
  • 100g extra-mature cheddar or vegetarian alternative, grated, plus a little extra to serve
  • good grating fresh nutmeg, plus extra to serve

Method

  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.
  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

Delicious soup. The only change that I made was to add a generous amount of Boursin with Garlic and Herbs during the blending instead of the Cheddar. I used the low fat one and it made a very creamy soup.

This soup is surprisingly delicious. I didn't have spring onions so I added some minced garlic from the cupboard. With Richard Corrigans brown soda bread it was absolutely sublime. Put leftover in freezer and I will define make it again.

Very easy and very good soup. I'm a bit surprised how good it is. I made sure to use some good quality mature cheddar and it really worked.

The soup is very easy to make. I added some Stilton cheese I had in my fridge and this gave a lovely taste. YUMMY!!!!

This soup is one of the simplest I have ever made and although there are not a lot of ingredients in it and it doesn't take a lot of time to make the result is fantastic. Will definitely be making this one again.

i love this soup! this has to be up there with best soups i've ever made and i've made some amount of soup! didnt have any spring onions in so used a leek and an onion instead. will definitely be making this again

Made this last night and am very disappointed; though it smells really nice, it tastes so bland. Annoyingly I now have this for my lunch for the next 4 days, so need to do something to it tonight so it is better for tomorrow!! Will try more salt, pepper and possibly cheese.

This is divine! I added a pinch of chilli flakes which gave it a little kick! so quick and easy to make! .

I am about to make this soup but would like to know how you have calculated the calories per portion, as you have not given any water quantaties or how MLS per serving?
I am on a very strict calorie count and without this information your calorie suggestion could be completely wrong and missleading

Possibly the dullest soup in the world. Completely bland and not even redeemable with a truckload of cheese :( Added some chilli in the end to salvage it.

Great soup, any so very easy. Not a great fan of courgettes, but this was superb. Added a few mint leaves with the nutmeg, really lifted the taste to a different level.
