  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.

  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

This soup is lovely. It is very filling and there is enough to freeze for many more lunches. Added a bit more cheese than it stated as it didn't have that much taste to begin with.

This was really nice - light but also filled me up. I really liked the cheese because it meant every now and then you got a semi-molten mouthful of cheddar - yum!

Lovely soup but I agree with other users' comments about the cheese. Mine tasted a bit bland at first so I added about 1 tbsp Parmesan and after that it became a firm favourite. I would also recommend using lots of black pepper when you season it.

Very nice soup!, we had it for dinner and didn't need anything else, as it was quite filling. I used manchego cheese instead of cheddar to give it an even stronger taste.

I love this recipe. I've just made it for lunch and noted supercakes' tip below, doubling the mature cheddar. It feels a rather naughty soup but its SO delicious that I will definitely be making this again and again.

I love this soup! I do slightly prefer it with fried onion but it's still really good with spring onions. I also like to add half a teaspoon or so of chilli flakes for a little extra warmth.

This is a great, quick and easy soup. Whilst the potatoes are having their 5 mins, I prepare the courgettes, then they have 5 mins, then the spring onions! So easy! I agree it needs more cheese. I use either a vintage or an extra mature cheddar and I add almost double what the recipe states, much better! Also I add a dollop of creme fraiche in for extra richness.

I made this soup yesterday and it was delicious, very easy and quick.I used two heaped teaspoons of Maggi vegetable stock powder and a good shake of ground nutmeg from a jar plus half a teaspoon of salt and a good few grinds of black pepper.

I've made this soup many times and it's fab! I only use half the amount of cheese specified, but that's my personal taste. It freezes really well and is a favourite in our house.

I can't believe anyone would find this soup bland unless they didn't season it adequately. I didn't have enough spring onions, so chopped up the green part of a large leek to make up the difference. I added a sprinkling of Waitrose's Sea Salt and Seaweed seasoning (wonderful stuff), a good sprinkling of sea salt crystals and lots of black pepper. I used fairly ordinary mature cheddar and the result was a fabulously thick, creamy soup full of flavour. Even my teenaged son, who really doesn't like courgettes or even soup for that matter, loved it!

Really tasty and so easy to make. The whole family loves it, even my 7 year old who doesn't like courgettes or cheese. Made it lots of times already with glut of courgettes from allotment.

has become one of my favourite soups as it freezes so well it has become a great midweek standby. So easy to make and I use tickler cheddar which seems to complement the courgettes perfectly

Delicious soup. The only change that I made was to add a generous amount of Boursin with Garlic and Herbs during the blending instead of the Cheddar. I used the low fat one and it made a very creamy soup.
