Ingredients

  • 500g potatoes, unpeeled and roughly chopped
  • 2 vegetable stock cubes
  • 1kg courgettes, roughly chopped
  • bunch spring onion, sliced - save 1 for serving, if eating straight away
  • 100g extra-mature cheddar or vegetarian alternative, grated, plus a little extra to serve
  • good grating fresh nutmeg, plus extra to serve

Method

  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.
  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

Made this last night and am very disappointed; though it smells really nice, it tastes so bland. Annoyingly I now have this for my lunch for the next 4 days, so need to do something to it tonight so it is better for tomorrow!! Will try more salt, pepper and possibly cheese.

Quick, easy and so so tasty. I added some carrots and celery as well. Amazing flavour. Will definitely be making this again.

This is divine! I added a pinch of chilli flakes which gave it a little kick! so quick and easy to make! .

I am about to make this soup but would like to know how you have calculated the calories per portion, as you have not given any water quantaties or how MLS per serving?
I am on a very strict calorie count and without this information your calorie suggestion could be completely wrong and missleading

Possibly the dullest soup in the world. Completely bland and not even redeemable with a truckload of cheese :( Added some chilli in the end to salvage it.

Great soup, any so very easy. Not a great fan of courgettes, but this was superb. Added a few mint leaves with the nutmeg, really lifted the taste to a different level.

Very easy soup to make. Did find it a little bland but added a ham stock cube, does increase salt however!! Next time may substitute a veg cube for a ham one. Great use of excess courgettes though!!

Exactly as described! A delicious easy soup recipe which can be frozen - and which is a great way to use up over grown courgettes.

Made this when my boyfriend presented me with a huge bag of courgettes from the allotment. Absolutely delicious - mega brownie points! my only addition was a couple of pinches of chilli flakes. Spiced it up just a touch.

This is really delicious, thick and warming and really easy to make. I didn't have any spring onions and used a finely diced red onion instead. It's not bland at all but it does need a really STRONG cheddar and a GENEROUS grating of nutmeg. It's a great recipe for 'allotmenteers' to have in their binder as it is a good way to use up excess courgettes and new potatoes.

Brilliant easy soup - I did not have spring onions so used shallots and added a handful of garden peas to deepen the colour, I also seived it, as I only had quite large round courgettes - made a beautiful smooth elegant soup - considering the number of courgettes growing in my garden I expect to have a freezer full of this soup by the end of the summer!!!!!!!!!!!!

Lovely soup! and very straightforward to make. My only advice would be to go easy on the nutmeg as it can overshadow the courgette. Will definitely make again many times more!

Halved recipe, but didn't quite have enough courgette so added carrot to make up the weight. Also added a couple of cloves of garlic and a small piece of ginger with the onion to add a bit of heat. Tasted delicious, a great standby recipe :)

Used the quantities (1kg Courgettes, 500g potatoes) but gently sauteed an onion in butter, added the courgettes and potatoes and a crished clove of garlic, softened for a while then covered with homemade chicken stock. Waited til the potatoes were cooked then added a couple of handfulls of frozen peas, brought back to boil then whizzed it all up and seasoned with lots of black pepper and a little salt. Lovely ! And as my polytunnel is in 'courgette overdrive' a great way to use up 1kg of courgettes :)

What a pleasant surprise!
I was given "cucumber" seeds by a friend and they have morphed into courgettes of which I am not fond. Decided to give this recipe a whirl and am very pleasantly surprised! Very fresh tasting and with underlying cheese and nutmeg it makes an interesting flavour.

I love this soup. so easy to make. My 8 month old baby loves it too, i just use a baby stock cube or water for her
