Method

  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.

  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

Really easy to make, it freezes well and is tasty enough without the extra cheddar sprinkled on top. A delicious soup, that I would recommend.

Just made this soup for the first time, I used chicken stock and an ordinary onion. Well my son said it was the best soup I've made and ate 2 bowls at one sitting. Success, will make again as it is great for using up the courgettes that grow too big in our polytunnel. Delicious!

Just made another huge vat of this soup using the last of the courgettes and spuds from my allotment. Rarely make the same recipe twice, but this is simply delicious - so much tastier than the sum of its parts! And so quick, with no peeling. Highly recommended.

Used one beef stock cube, instead of 2 vegetable stock. I wasn't sure how much nutmeg to put in. I ended up putting 1/2 teaspoon in. It possibly could do with more nutmeg. I also like my soup chunky, so I didn't whizz it. It is a very warming, and satisfying soup. I have tons of courgettes and potatoes from my allotment, and will be using this recipe a great deal.

Bet this would be great with some diced fried/grilled bacon added at the end after blitzing the soup - going to try that next time!

Really nice soup. I added a few baby carrots and a handful of mushrooms that needed using up, plus a couple of cloves of pickled garlic and a handful each of fresh basil and flat leaf parsley. Seasoned very well with pepper and nutmeg. The soup is wholesome and warming, but feels light and healthy at the same time. iI have gluts from the allotment of everything I used, so will definitely be making this one again - the freezing is a bonus.

Quite tasty although flavours didn't blow my mind. Lovely green colour and it tasted healthy (not in a horrible way). Good to make when your cupboards are starting to look bare!

Halved the recipe as only had 2.5 courgettes, used a smallish onion instead of the spring onions as didn't have any and replaced the vegetable stock for watery gravy (as usual, because we never have stock). Kept the amount of cheese the same despite other people's recommendations as didn't want it too fatty, just sprinkled a tiny bit extra on to serve.

All in all it made a decent lunch. Went down well with the family, would make again.

This is a really easy soup to make and tastes amazing. It is also low in calories and I made sure I used reduced fat mature chedder to give it a good cheesy taste.

Did not have any spring onions, so skipped them, but I added some chili flakes to add a little colour and flavour when serving. Really nice and light soup.

This is a beautiful soup, using my food processor made the job super quick and the results are surprisingly good!!

Fabulous and super easy to make. Don't miss out the spring onions though- its not the same without them. I also didn't have any nutmeg but it tastes great without.

I've had better soups, but this is nice and creamy, and helps to use up courgettes! I added some creme fraiche to mine, which went down nicely!

This is a great recipe, and loved by all the family. I can, however, understand the claims that it is bland, and I think this depends a lot on the type of cheese you use. A more mature cheddar is saltier, and this will improve the flavour - but the other thing you can do, of course, is to use a proper stock, chicken or game, or something with more flavour than veg stock. A really good way to use up that glut, so don't give up on it!
