Courgette, potato & cheddar soup

This freezable soup is a delicious way to use up a glut of courgettes

Method

  1. Put the potatoes in a large pan with just enough water to cover them and crumble in the stock cubes. Bring to the boil, then cover and cook for 5 mins. Add the courgettes, put the lid back on and cook for 5 mins more. Throw in the spring onions, cover and cook for a final 5 mins.
  2. Take off the heat, then stir in the cheese and season with the nutmeg, salt and pepper. Whizz to a thick soup, adding more hot water until you get the consistency you like. Serve scattered with extra grated cheddar, spring onions and nutmeg or pepper. Or cool and freeze in freezer bags or containers with good lids for up to 3 months.

    Fantastic recipe. I scaled down the recipe for 2 people and didn't have quite enough courgette so added in a carrot as well. Stunning flavours and so easy to make!

    Delicious soup! I used leeks instead of onions which worked well. It was almost a meal in itself. On of the best uses of my glut of courgettes!

    A really delicious taste combination. A glut of courgettes meant I was looking for recipes to use them and this fitted the bill. Spring onions rather than large ones mean that the fairly delicate taste of the courgettes still shines through.

    Just made this to use our glut of courgettes, as I didn't have spring onions I softened white onions in butter then completed as per recipe. hope it freezes well.

    Absolutely gorgeous - the kids (3 and 4) didn't stop raving about it and I've struggled to get one of them to eat soup before. Will definitely be making this again!

    sorry didnt like it but ..i dont like courgettes much!!! hoping it was a way of me eating them.. i didnt like butternut squash, but made your pot n butternut soup on this site and loved it.. make almost every week n its not even winter!!!.. but a very easy recipe.. if i made again i would add garlic n chilli, so i could disguise the courgettes!!! lol

    This is surprisingly delicious, and very easy/lazy! I've never made soup without sweating the vegetable in oil before and I don't think I'll bother again after doing it this way, it's so much easier. I didn't have any onions so I used some garlic which worked well. I think I would peel the potatoes next time as some of the skin wouldn't blitz completely and it's effected the texture. I'm going back for seconds...

    Can't believe a soup so simple to make could be so tasty. I left my soup a little bit chunky as my husband prefers it like that. Such a good way to use up courgettes.

    Really love this - great way to use up GIANT courgettes and agree with the comment that it's great not having to sweat veg etc. I don't generally add much salt to my food but I did find that salt was the way to combat blandness with this soup - maybe an even more matuer cheddar would have done the trick.
