Method

  1. Heat oven to 180C/160C fan/gas 4. In a large bowl mix the self-raising flour, baking powder, cinnamon, wholemeal flour and golden caster sugar.
  2. In another bowl, mix the eggs, semi-skimmed milk and sunflower oil. Pour the wet ingredients into the dry and mix well, then stir in the grated apples and sultanas.
  3. Divide the mix between 12 muffin cases and bake for 25 mins. Cool on a wire rack, then pack in a container for lunch.

Chicken tikka pockets

Heat oven to 180C/160C fan/gas 4. In a small bowl, stir 2 small skinless chicken breasts, diced, with 1 tbsp tikka curry paste to coat. Fry for 15 mins, or until cooked through, then cool. Fill 2 wholemeal pitta breads with cucumber slices, the chicken tikka pieces and 1 tbsp fat-free yogurt, then wrap up in foil ready for lunch (serves 2).

Banana & strawberry smoothie

Whizz 1 small banana, 200g strawberries, chopped, and 200ml semi-skimmed milk in a blender until smooth. Divide between two bottles and shake before you drink (serves 2).

    Made with some apple & cinnamon bread flour and grapeseed oil instead of sunflower oil. These needed about 10 minutes additional time & slightly higher temp at the end but came out very nice. probably ended up more stodgy due to high gluten flour but very substantial and not dry either so a success I would say!

    This works really well as a loaf - I did it for 45 minutes at the same temperature, covered it, then gave it another 15 minutes or so. Really lovely and moist. Might add a shade more cinnamon next time.

    I used sweetened soy instead of milk but kept everything as per recipe. Really tasty, and quite a good size muffin. My children loved them.

    Perfect as a breakfast muffin - left the apple coursely grated so it was lovely and moist. Added extra cinnamon too, which adds a bit more sweetness.

    I'm on the hunt for tasty low fat options. These are delicious. I adapted the recipe slightly using mainly wholemeal flour and adding 1 extra apple and about 25ml milk which meant they were moist and fluffy. Great breakfast on the go which keeps you going.

    I believe that apple pips do contain cyanide! Perhaps a warning may be in order as I have seen some chop the apple and put all in to food blenders, juicers etc..
