Roast pork with apples & mustard

Method

  1. Heat half the oil in a large frying pan. Core and cut the apples into wedges, then cook for about 10 mins until caramelised and softened. Remove from the pan and set aside. Heat the remaining oil. Fry the pork on each side for 2 mins. Add the stock and mustard to the pan, then bubble for 5 mins or until the pork is cooked through. Return the apples to the pan with the sage and cook for 1 min more.
  2. Remove from the heat and stir in the crème fraîche and some seasoning.

    Lovely dish. Didn't have any creme fraiche so just left that out.....it was still good. Would definitely make it again, very quick and easy.

    I used pork chops so followed the recipe up until adding the stock. I removed the chops from the pan after browning them and used apple juice instead of stock. I then added the mustard as in the recipe and also added two dessert spoons of honey. I returned the pork chops to the pan and baked it in the oven until the chops were cooked. five minutes towards end of cooking I added the apples which had been caramelised. I removed the chops and kept them warm. i reduced the sauce then poured over the chops and served. it was delicious.

    Really tasty dish, even the kids liked it despite having hot mustard in it! The only thing they weren't keen on bizarrely were the apples - which my husband and I thought were delicious. The kids have asked me to make for dinner again so definitely on the family meal list. Served with green beans and rice to make a change from potatoes.

    Was a favourite of many to my family. I used cooking apples and Greek yoghurt to reduce the fat content. I served it with honey-glazed carrots, Parmesan potatoes and white cabbage. Very very tasty and easy to make!
