  1. Heat the oil in a pan, then fry the garlic for a few secs. Add the chopped tomatoes and balsamic vinegar and bubble for about 15-20 mins until the sauce is thick.

  2. Meanwhile, lay the pork medallions between two layers of cling film and bash with a rolling pin until they are about 1cm thick. Mix the flour with some seasoning in one bowl, put the egg in another and the breadcrumbs in a third. Dip the pork in the flour, then the egg, then the breadcrumbs. Heat a grill to hot, then cook the pork for 3 mins on each side, until golden and cooked through. Keep warm.

  3. Cook the pasta following pack instructions. Stir through the tomato sauce and the chopped basil, divide the pasta between 4 plates, put the crispy pork on top and eat immediately.

I really liked this, made a few adjustments like I used chicken instead of pork and I used my own tomato sauce but next time will def try the tomato sauce with balsamic vinegar as I think it will b nice. Look forward to making this again and I recomend it. :¬)

Tried this tonight - but with chicken!

Added 2 cloves of garlic. The tomatos were really tart so added a little bit of sugar and some tomato puree.

Cheated and used 'ready made' breadcrumbs from Waitrose rather than fresh *blush* and grated some parmesan over the spaghetti and sauce

I thought it made a nice mid week change, but wish i had made more as I am starving now!!

really really easy to do. I added bacon in with the garlic and the sauce was lovely! (I used tesco chopped toms with basil in a carton) and added fresh basil at the end. Quick and delicious, will do again

Really tasty. I pepped up the sauce a bit with peperoncino and dried basil, which gave it a bit of a kick.
