Method

  1. Cook the salmon in the microwave on High for 3 mins or until just cooked through. Remove and break up into large flakes, then allow to cool slightly.
  2. Mix the cottage cheese, dill and spring onions with some seasoning. in another bowl mix the white wine vinegar and sugar until the sugar dissolves, then add the cucumber. Put the beetroot into another bowl.
  3. Lightly toast the rye bread, then bring everything to the table and dig in.

    I agree with most of you,This is not cooking,This is not even Scandanvian food apart from the bread. I have been to sweeden loads of times and its nothing like this.Sorry Good Food.

    I have my own version. Get some rye bread (or other bread if you prefer). Go to the fridge and take out anything that still looks edible. Cut things decoratively add a bit of dressing (if you wish) and arrange on a plate. Is this a recipe?

    Whilst I agree that this is not strictly speaking a recipe, more "construction cooking", it is useful inspiration for those of us devoid of imagination at the end of a long day (particulary as I cook for a living too!). I particularly liked the fact that, whilst it may not strictly speaking be Scandinavian, it uses fresh and light ingredients. We enjoyed it as it made a nice change from bread, cheese and cold meats.

    This is a good idea, even if it isn't a recipe, and it's the sort of presentation that would inspire me to transpose it to say, Indian, Chinese or Mexican cusine for example. So, I've got it bookmarked to spark my imagination when I'm feeling uninspired.

    Not tried this, but looks good! I will try but felt that I had to leave a comment about the comments!! I was brought up by simple rules, one on the best was "If you have nothing good to say, best not say anything" There's a few here who could learn from that! Well Done Good Food, keep it up and don't take the negatives to heart...
