Smoky chicken, sweetcorn & pancetta salad

Method

  1. Fry the pancetta in a non-stick pan until the fat starts to melt, then stir in the chicken. Season with pepper, turn up the heat then fry for 5 minutes, stirring often, until both pancetta and chicken are golden.
  2. Heat a griddle pan. Rub the corn with a drop of oil, season, then griddle for 5-8 minutes, turning often, until tender and blackened in places. Meanwhile, whisk 1 tbsp oil, the mustard, honey, paprika, garlic and vinegar with 1 tbsp water then season to taste.
  3. Cut the corn kernels from the cob then toss with the chicken, pancetta, lettuce and dressing.

    Forgot to add the mustard but even without it the dressing was amazing. Didn't have hot smoked paprika so added a pinch of chilli powder with half a tsp of normal smoked paprika. Served with spicy wedges. Mmmm...... nicest salad ever!

    I added chilli flakes, dressing fantastic. I also used a tin of sweet corn and added butter whilst gently warming, good mid-week meal.

    Good and filling salad, didn't need any bread which I thought it might. Used chopped streaky bacon but more of it and just one large chicken breast, also a tin of sweetcorn added to the bacon & chicken and just 1 head of little gem. Left out garlic as I'm not keen on uncooked.
