Bombay samosas

Perfect for a picnic, these samosas are given a healthy twist to make them more nice than naughty

Method

  1. Fry the onion, garlic and ginger in a spray of oil for 3 minutes then stir in the curry powder and mustard seeds. Add the potatoes and beans with 400ml water. Cook for 20 minutes until veg is soft and liquid evaporated. Add the peas for the last 5 minutes. Heat the oven to 200C/fan 180C/gas 6.
  2. Spray a sheet of filo pastry with oil then cut into three strips. Put 2 tbsp of mix at the top of a strip and fold over itself into a triangle. Continue folding down the length of the pastry to make a samosa shape. Put on a non-stick baking tray. Repeat with rest of pastry and filling. Bake for 18-20 minutes until golden brown.

    I made these for the first time as we are Indian cuisine lovers. They were a little fiddly to put together, once cooked and eaten quickly they were fine and tasty , but if left to cool they soon go soggy. We also like spice so may go for a medium or hot curry powder next time.

    just made these to use up he filo left over the crispy greek style pie that we both love from this site. very simple to make, i used 1 medium sized potato, medium curry powder and finely chopped my ginger; managed to get 7 samosas out of my mixture, i didnt oil the sheets before i filled them, just brushed some oil over the top before baking - gorgeous! will freeze the remaining ones and reheat them on monday with our weekly curry! check out my baking blog http://bumblebakery.blogspot.co.uk/
