Chicken, sweet potato & coconut curry

Serve this mildly spiced curry with rice noodles, basmati rice or chappati breads and introduce your kids to curry

Ready in 25-35 minutes

Method

  1. Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconut milk. Bring to the boil, then simmer for 15 minutes.
  2. Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste before serving.

    Absolutly loved this recipe and it was so easy to make aswell!! Made it for family at a party last night & it went down really well with both adults & children - I even had people asking for the recipe at the end of the night!! I left out the chicken & used chickpeas as suggested by others & also added more curry paste & a bit of paprika at the end when I was seasoning it to give it more of a kick!! Will defently be doing this again & again!! Yummy!! :)

    yummy!!!!!! i have just made it and i cant stop eating it!!!!! it ment to be for supper, but i am not sure if it will last till 5!!!!!! i agree with others taht it needs more curry paste. yummy!!!!!!!!!!
