Chicken, sweet potato & coconut curry

Serve this mildly spiced curry with rice noodles, basmati rice or chappati breads and introduce your kids to curry

Method

  1. Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconut milk. Bring to the boil, then simmer for 15 minutes.
  2. Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste before serving.

    This sounds lovely, my bf and i love curry so i will be making this on Saturday. I have taken on board the fact on adding more veg and paste. So i am going to gently fry chopped onion, garlic and thinly sliced mushrooms before adding the paste and so on ..... I will also use a hotter paste as we like a good deal of kick but not so much that it overpowers the gentle sweet potato and coconut milk, I think a thinly sliced red pepper may go nice awell, I will add this at the simer stage. Im also going to prepare this in advance so all that will need to be done is heating it back through when we are ready to eat. I will most likely serve this with Basmati and wild rice, ( i have it in the cupboard) and nan bread as i have some in the freezer. I will be back to let you know how it went. x

    Well i said i would try this and be back to comment so here i am... This was absolutly gorgeous. It would have been too mild for our spice loving tastes so i added a generous amount of Madras paste, i also added, a sliced red pepper, sliced mushrooms finely chpped onoion and sweetcorn, i added the sweetcorn along with the pea stage. It came out perfect and i will definetly will make this again, i served it with Basmati & Wild rice and garlic & Coriander Nann. Lovely. I did make it in advance, so heating it gently back through was so simple. x

    Always a great success!!! If you are cooking for adults and kids at the same time you can serve the one for the kids with some natural yoghurt or cream, this will take a bit of the spicy flavour. Kids will love it!

    Great recipe for a quick and easy curry. I added more curry paste as it would've been too bland otherwise. I also added more veg. I have never cooked sweet potato before so found this a lovely change to using normal potatoes. Would definitely make again!

    This is one of the first recipes i found on bbc goodfood about a year ago and we make it atleast once a week! I dont add the chicken though and tastes just as amazing!

    The blandest curry I have ever made. It definitely needs more oomph. Even with a stronger paste (I used a medium Tikka) it lacked everything that you'd normally get from the quickest of curries. Dull. I think that in order to rate it, the fact that I have to give it one star is a travesty. Did this come off Ready Steady Cook?

    Very very Yummy!! I put this in my slow cooker all day whilst I was at work. This is a great dish, extremely easy with lots of taste! and great the next day too!

    Really lovely! I used balti curry paste which gave it a lovely subtle flavour which my two children loved (4 and 1), even asking for seconds! Served with poppadoms - adults loved it too!

    I found the sauce was taking ages to reduce and plus my little girls (twins 4 and a 3 year old) didn't like to look of the sweet pot chunks so I did my usual and liquidised the chunks into the sauce then put back with the chicken and peas, it did the trick for them and plus it thickened up the sauce perfectly. This is now a regular for my family.

    This dish is delicious and simple - perfect! I didn't have any lentils so when I made the recipe up it was very liquidy, so I chucked in a couple of handfuls of rice and cooked for about 15-20 mins, and had a yummy, creamy curry/risotto concoction - very tasty!

    Excellent !!!! It was the first time when I had done the curry in my life!!! I really enjoyed cooking it, but enjoyed even more eating it! I think that with this meal I've started my journey in the world of currys :))) ENJOY !
