Ingredients

  • 1 tbsp sunflower oil
  • 2 tsp mild curry paste
  • 2 large boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 medium-sized sweet potatoes, peeled and cut into bite-size pieces
  • 4 tbsp red split lentils
  • 300ml chicken stock
  • 400ml can coconut milk
  • 175g frozen peas

Method

  1. Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconut milk. Bring to the boil, then simmer for 15 minutes.
  2. Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste before serving.

Can anyone tell me what curry paste they used? I struggled to find a standard "curry" paste. Ended up buying a tesco finest korma paste since its coconut based anyway. its simmering just now but wanted to know what brands everyone else uses? Thanks!!

Made last night for parents anniversary, all enjoyed, made with medium curry paste, but will probably add some chilli next time, was still very mild, would cook veg for a bit longer next time, like my sweet potato bit softer, also added carrots great recipe for doing what you want, want to also add chickpeas but husband doesn't like, but he can pick them out, was enough food for 5 adults so we had plenty left. Will def be making again.

Used creamed coconut and extra stock instead of coconut milk, but still super tasty!

Great for children as it is so mild. I added onions, garlic and ginger at the start and later a small can of chick peas and some frozen spinach. I did not add the peas. It was very tasty although far too mild for my liking. I loved the fact that it was packed with vegetables that the children would not normally eat and I will definitely be using chick peas more often in my other curry recipes. I really like the idea of making a soup out of this recipe.

An easy meal and great for babies too. My 10 month old son loved it. I prefer something with a bit more kick. I don't buy premixed spices so I used a combination of ground cumin, coriander, chili powder and turmeric.

Yummy!!! I live in Brazil where very few spices are available, however Brazil does have curry! Didn't have sweet potato so I added some sugar to give it that sweet taste. Was similar to chicken tiki masala without all the other flavors. Only made me crave indian food thats why I'm giving it a 4.

Really lovely and so easy to make. I only used one sweet potato and used more lentils to make it more like a dhansak and it was so tasty. Highly recommended.

Very nice - just right for my boyfriends taste but a little mild for mine. I used chicken leg meat (boiled first, then pulled the meat off the bone and added to the curry), tikka masala paste, no lentils and I added lime and corriander at the end. Very easy and quick

v nice and easy recipe...like other people I added extra curry paste and a couple of chillis as I like my curry spicy...also added green beans, mushrooms and brocolli to pad it out...yummy! (Oh and used half fat coconut milk to keep calories down - still lovely)
