Ingredients

  • 1 tbsp sunflower oil
  • 2 tsp mild curry paste
  • 2 large boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 medium-sized sweet potatoes, peeled and cut into bite-size pieces
  • 4 tbsp red split lentils
  • 300ml chicken stock
  • 400ml can coconut milk
  • 175g frozen peas

Method

  1. Heat the oil in a deep frying pan or wok, stir in the curry paste and fry for 1 minute. Add the chicken, sweet potatoes and lentils and stir to coat in the paste, then pour in the stock and coconut milk. Bring to the boil, then simmer for 15 minutes.
  2. Tip in the peas, bring back to the boil and simmer for a further 4-5 minutes. Season to taste before serving.

This is so easy to make and has become a favorite within my household. Is such a quick simple recipe but the results are great, lovely and mild i have tried with natural yogurt and 150g of dessicated coconut for the low fat option and tasted just as good. Also tired a combination of sweet and regular king edward potatoes. Will definitely be making again.

Far too little curry paste in this. I should have trusted my instincts and added 2 tablespoons rather than the 2 teaspoons in the recipe. I stuck to the recipe and didn't like the peas in this at all. I think the addition of spinach instead and more curry paste would be an improvement.

Great dish, very versatile. I used green beans instead of peas but and green veg I imagine would add colour and flavour.

Can you put rice or pasta instead of split lentils in the curry, not a fan of then in this house .

This was absolutely lovely but I would advise using more curry paste (if you're serving it to adults, of course).

Delicious and quick. Followed the recipe exact however next time I will add a little more curry paste and a fresh chilli to give it more of a kick.
We had some left overs which tasted even better the following day.

Tasted great once made however the potatoes took 45 minutes to cook in the curry before they were soft enough to eat! I had to remove the chicken part way through to avoid it becoming overdone

This is a great recipe for the family. All my kids loved it. I stirred fresh spinach through it to up the veg content and highly recommend serving it with chopped coriander - it makes all the difference.

Love the flavour but did find it a bit runny so recommend leaving uncovered or cut down on the liquid

Made this for my family (2 children aged 7 and 14). Went down a storm with the children rating it 5 stars and 4.5 stars. Very quick and easy to make. Served it with basmati rice and homemade chapatis. My husband and I would have preferred more spice, so next time, I'll chop up some fresh chilli and sprinkle it over the top of our servings!
