Salmon, avocado & potato salad with lime & chilli mayo
This delicious dish for two takes just 20 minutes to make - a great mid-week meal

- Cook the new potatoes until tender then drain. Mix the avocado with a little of the lime juice to stop it discolouring then mix the rest of the lime juice with the mayo, chilli and coriander and some seasoning.
- Halve or slice the potatoes and put on plates. Add the avocado, salmon and spring onions then drizzle over the dressing.
