Salmon, avocado & potato salad with lime & chilli mayo

This delicious dish for two takes just 20 minutes to make - a great mid-week meal

Method

  1. Cook the new potatoes until tender then drain. Mix the avocado with a little of the lime juice to stop it discolouring then mix the rest of the lime juice with the mayo, chilli and coriander and some seasoning.
  2. Halve or slice the potatoes and put on plates. Add the avocado, salmon and spring onions then drizzle over the dressing.

    This was delicious, but the portions were rather small - I would bulk it out with more potatoes and some salad leaves next time. Also, I did not have any coriander so used dill instead.

    Things my partner hates - chilli green leaves coriander smoked anything (bar kippers ? !). Knew he'd it eat it all after constant nibbling by myself during preparation.Great idea for something different.

    Gorgeous, tasty mid week summery meal! I added extra chilli to the dressing and oven baked the Salmon fillet with garlic butter before serving. Will make again!

    Very tasty recipe, made it pretty much according to the book but added a bit more mayo. Next time I'd also up the quantity of the salmon too. Otherwise, easy and great summer evening meal :)

    Delicious dish and quick to make coming home from work. I didn't have hot smoked salmon but baked 2 salmon fillets. Will make again but will add salad leaves, broccoli or green beans to up the vegetable content.
