Chorizo with white beans and spinach

This super-easy dish has a spicy kick thanks to the chorizo, and will be on the table in just 30 minutes

Method

  1. Cook the onion in 1 tbsp of olive oil until softened then add the chorizo and fry for a few minutes until it starts to give out its oil. Add the chicken stock and simmer for a minute then add the beans and cook for 5 minutes. Stir in the spinach and cook for 2-3 minutes until the spinach is wilted. Serve with crusty bread.

    My version of this only gets 3 stars as I purchased cheaper chorizo than I usually would buy, BUT the taste was lovely! Personally I would've cooked the beans for a touch longer, but I'm a little fussy with cooking of beans. Big slices of home made bread to mop up the juices worked so very well!

    Tastes great. I added more chorizo than 50g and I added a pinch of salt and pepper as I noticed that this wasnt on the recipe

    I used more chorizo and swapped the chicken stock for passata, which I think is much more suitable. Good recipe though, simple and easy to do.
