Method

  1. Heat a large, lidded frying pan or fl ameproof casserole and add the oil. Fry the chicken thighs for 2 mins, turning halfway through cooking, until lightly coloured, then lift onto a plate. Add the leeks to the pan and stir-fry for 3 mins, then add the garlic and tip in the chickpeas, most of the lemon zest and rice. Stir together until well mixed.

  2. Nestle the chicken in the rice mix. Pour over the stock and season lightly. Cover and cook on a low heat for 20 mins until the chicken is nearly cooked through and the rice has absorbed nearly all the liquid. Sit the broccoli on top of the rice, cover and continue to cook until the rice and broccoli are tender and the chicken cooked. Sprinkle with the remaining lemon zest to serve.

I tweaked this recipe ever so slightly - used chicken breast instead of thigh, added one chilli and mushrooms. I found this to be a delicious healthy meal, and so quick and easy to make! Barely any dishes to wash afterwards, and despite other comments on this thread I did not find it to be bland at all. Really lovely, wholesome meal. Kept me feeling full and not bloated!

Stick to your day job then, stop making such negative comments based on your personal experience. It's not the recipe, trust me, it's either that you can't read or it's just your total lack of understanding about cooking. Mine was so dry that I had to add stock, and how can it be bland if you fry chicken, then leeks and garlic, and add lemon zest and stock? 5 flavors right there! Did you read your comment before you clicked 'post'?

I agree with previous comments that the broccolli should go in a bit earlier. I had to give it 20 mins to cook; thankfully the chicken seemed to stay nice a moist but risking the rice turning into slush! Otherwise very tasty for such a healthy dinner!

I created an adapted version of this recipe which you can find here: http://pastebin.com/raw.php?i=7iH5cwkR It sounded lovely, but my requirements were a bit different: * I wanted it to serve 8 people. * I prefer chicken breasts, so I adjusted the recipe to use an appropriate amount of breasts (half a breast per person is fine considering all of the other ingredients that are being used). * I strongly believe that you should use 1 garlic clove per person, plus 1 extra for luck. * There were some complains about blandness, and I find that ground coriander and cumin go nicely with this type of dish (because we're serving 8, 2 tsp of each is probably the right amount). Hope it helps somebody!

This recipe was quite bland and I found I had to use 500ml of stock so it wouldn't dry out and for the rice would cook properly. If I made I would have to make some major adjustments.
