American-style pineapple & banana pancakes

These American-style pancakes are easier to make than traditional ones

Method

  1. Roughly chop the pineapple and slice the banana. Tip the flour, baking powder, cinnamon and sugar into a bowl and mix well.
  2. Make a well into the centre and crack in the egg, then gradually mix the egg into the flour, adding the milk gradually to make a soft batter.
  3. Stir in the pineapple and banana. Heat a little oil in a non-stick frying pan, add the batter in heaped tablespoonsful, well apart to allow them to spread. When bubbles appear on the surface, flip the pancakes over and cook until light golden.
  4. Cook all the pancakes and keep them warm. Serve 2-3 pancakes with a spoonful of yogurt and a little maple syrup poured over.

Making it different

Other fruit combos that work well in this batter include a small, chopped mango and the grated rind of a lime (omit the cinnamon); 100g/4oz blueberries and a small chopped ripe pear, or replace the fresh fruit with 100g/4oz ready-to eat dried fruit such as chopped apricot and sour cherries or cranberries. Replace the yogurt with a good scoop of vanilla ice-cream

    Easy, quick, tasty pancakes. I didn't need quite all the milk - maybe as fresh pineapple was rather juicy. Defo agree with the others - this only makes enough for 3 people and that was serving with yoghurt and more fresh banana and pineapple. Will make again for sure.

    Very easy and tasty. I think this will become my staple pancake recipe from now on! Didn't have any pineapple but used raisins instead. Love the cinnamon flavour!

    Absolutely delicious and so easy to make, my son helped with the measuring and the mixing. They got a thumbs up from him. Didn't add the pineapple as I didn't have any but I substituted the milk for buttermilk as I had some left over from a recipe for muffins. Will definately be making them again.

    I found that there was too much fruit in the recipe and they didn't come out anything like the picture! They were nice though and I will try them again with a few tweaks

    I made these last night for pudding for me and my hubby and they were absolutley delicious. Really quick and easy and very tasty. Will definitely be making these again. Used fresh pineapple and banana but I didn't have any cinnamon so used mixed spice instead with dark muscovado sugar instead of light - gorgeous. Halved the recipe and there was just enough for 2.

    Made this morning for breakfast with my 2 year old and the result was perfect! I like the idea that they contain a fair amount of fruit and the taste was delicious.will try to substitute the pineapple with chopped apples.

    Yummy! first time I made pancakes and they turned out great. Served with a drizzling of honey instead of maple syrup or yogurt. Perfect Sunday morning breakfast. Agree with comment re: burning - they really do burn easily - they only need a few seconds of cooking on each side so be careful!

    I've been making these pancakes a while now, a favourite with my kids and their friends! I usually double up the receipe for 4-5 kids. Like others I reduce the amount of suger also when I don't have pineapple, I use just bananas or sometimes grate a sweet apple in. Very filling for those little tums and great to know you're getting some goodness into them. A winner all round, and a few cold ones (leftovers) in the fridge today that they can have for school lunch tomorrow ;o)
