Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Fry the tomatoes in the oil, add the pesto and creme fraiche and serve over griddled halloumi slices or spoon over some spinach and ricotta-stuffed ravioli.

So quick and easy to make, and tasted lovely. Mine didn't look the same colour as the photo - may have added a little too much pesto. It was still nice though and I will be making it again. :)

Really didn't like one bit. Think you really have to like pesto as it is such a strong taste. thought it was so basily and then it asked for extra at the end. me and my bf couldn't believe how high up this recipe is! I will be sticking to the chicken and mushroom! yum.

Absolutely Brill. So easy to make and really delicious. I have slightly adapted by adding Chorizo sausage but this is purely my choice. I have made it lots of times and always get the thumbs up from picky kids up to mother in law.

Great but the pesto ruined it. I used the pesto from supermarket in a little jar which was a big mistake! Really strong taste. I didn't know how to make pesto. Also I used mascapone instead of creme fraiche coz I had mascapone in the fridge. I think creme fraiche would have been better less dry.
