Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Making it veggie

Fry the tomatoes in the oil, add the pesto and creme fraiche and serve over griddled halloumi slices or spoon over some spinach and ricotta-stuffed ravioli.

    Agree with all positive comments made. Excellent quick evening meal, you can change what you put in the sauce too, maybe onions/mushrooms. To make it even speedier I would use thinner slices of chicken breast, flash fry or even grill, then put to one side whilst making the sauce.

    I love this receipt. I have done it over and over again it is so easy to cook and the taste is delicious. I like to prepare my own pesto sauce for this receipt. From where I live I hardly find pine seeds so it goes very well with nutsmeat.

    Quick, easy, delicious. If you're in a hurry use 'quick cook' chicken (breastssliced very thin) and takes 1/2 the time!

    I tried the recipe and enjoyed it but the sauce was a deep tomatoe colour unlike the creamy coloured sauce in your illustration. Maybe the pseto I used

    I love this dish, and I know it says low fat but i've tried it with full fat creme fraiche and single cream which is just lovely - I would say the family loves it but they hardly get a looking!!!! Love it, and sooooooooo easy to do... try it!
