Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Making it veggie

Fry the tomatoes in the oil, add the pesto and creme fraiche and serve over griddled halloumi slices or spoon over some spinach and ricotta-stuffed ravioli.

    easy simple an gorgeous meal, i also added a green chilly and fried bacon bits and was gorgeous, i served it with home made steak cut chips but would go perfect with a tarragon mash. definatly will cook this again

    The chicken breasts I used were quite large - even cut in half, 12-15 minutes was not long enough. The end result was great. I'd definitely make it again and it's given me ideas for variations of my own.

    Lovely recipe.. My sister suggested using red pesto ( i use the sacla fiery chilli one) and a tin of cherry tomatoes.. delciious and so easy...

    Superb recipe. Change the pesto for sundried tomato pesto and added a finely diced onion to it too. Fried the onion in the pan alongside the chicken for the last 5 minutes of the cooking time before adding the tomatoes etc. Really really tasty healthy meal.
