Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Making it veggie

Fry the tomatoes in the oil, add the pesto and creme fraiche and serve over griddled halloumi slices or spoon over some spinach and ricotta-stuffed ravioli.

    So simple to make! I also added garlic, onion and mushrooms. And for extra treat I smoked the tomatoes using tea leaves. Gave it added taste to the sauce. To ensure chicken was cooked though, I put it in the oven for 10min and it still came out really moist. Will make again - but maybe add some Philly/Mozeralla to the sauce?

    I love this recipe, I have done it several times, I also like to use the same sauce but do it with King Prawns and mix everything together with Linguine delicious

    A real quick and easy recipe - the longest bit was trying to decide what sides to have with this. Will deff be making this again - the whole family loved it :o)

    I personally didnt rate this dish very high, it was slightly too bitter in my opinion. however the girlfriend her sister and mum all really enjoyed it and didnt seem to share my opinion.
