Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.

  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

We found this recipe really quick and easy, and not too many ingredients which is a bonus. It was very tasty, with much more flavour than I expected (definitley think you'd have to make the sauce in the same pan as you'd cook the chicken for the flavour - rather than grilling or cooking separately and making sauce separately as some people have suggested). We will definitely make this again.

This was extremely tasty and so easy to make, I added extra creme fraiche and one more tablespoon of pesto just to make it more saucy but totally loved it!

I made this last Saturday night and was surprised at just how nice it was. I added mushrooms and some chicken stock to give it a more meaty flavour but I'm certain that wasn't necessary. I will definitely be making this again.

Love this quick and delicious recipe - have added extra veggies such as spinich and diced courgette both work really well. A hit with the family....

Really easy and very nice - I served it with sweet potato and carrot mash which offset the pesto really well.

Errm hiya!! I tried this out last night (Valentines) and it was lovely, added some vegetables, And some warm crusty bread and it was delicious. I may have put a little too much pesto in which may be why it had a kick to it but yea, nice.

I made this at the weekend for some friends and it went down very well. I also cut the chicken breasts into strips to make them cook faster.

I tried the recipe and enjoyed it but the sauce was a deep tomatoe colour unlike the creamy coloured sauce in your illustration. Maybe the pseto I used

Quick, easy, delicious. If you're in a hurry use 'quick cook' chicken (breastssliced very thin) and takes 1/2 the time!

i love this recipe though i prefered it when made with pesto from the fridge not from a jar.
