Griddled courgette & seafood lasagne

Superhealthy and lower in fat than a traditional lasagne, this version is also a lot quicker to assemble

Method

  1. Heat a griddle and brush a little oil on the courgettes. Cook in batches until lightly charred. Season and scatter on the chilli, then set aside.
  2. Heat oven to 200C/180C fan/gas 6. Pour a little passata in a medium-sized ovenproof dish. Place half the seafood over it, then season and top with a third of the courgettes.
  3. Top with 2 sheets of pasta, then more tomato sauce, seafood, courgettes, another layer of pasta, more tomato sauce and finish with the rest of the courgettes. Mix the Parmesan and breadcrumbs, then scatter on top and cook for 25-30 mins until golden. Steam or boil the green beans and serve with the lasagne.

    If you prefer a less rich version, try the courgette lasagne at www.tasteforbologna.blogspot.com You can reduce even more the amount of fat by susbstituting a mixture of grated parmesan and water, quickly processed, for the top layer of bechamel sauce.

    This is really tasty. I replaced the seafood mix with 1 bit each of haddock, smoked haddock, salmon and some king prawns. I also added onions and mushrooms. Great for anyone doing weightwatchers, coming in with 8 propoints per serving.

    I've just finished making/preparing this, its now sitting in the fridge waiting to be cooked tonight. I also added French beans and Thinly sliced red pepper to the lasagne. I'm serving it with a corn on the cob each. I don't want to serve it with garlic bread, as I would usually do with lasagne, because we are on a health kick and we had garlic bread last night.

    Quite nice, I let the children assemble it and they enjoyed eating it. Char-grilling the courgettes made them taste delicious, but I think 4 is too many...

    Very tasty dish - hard to believe it is low fat and healthy! It was pretty quick and easy too, although I did use a tin of chopped tomatoes and not passata, I added onion and garlic seperately. Well done Good Food!

    This was pretty nice. I wasn't completely convinced when I read the recipe but gave it a go to use up some courgettes from the garden and a bag of seafood that had been in the freezer for a while. Cooked the courgettes on the griddle pan which gave them a great flavour. A pretty easy meal to assemble and tasted pretty good. I would make it again.

    This is a great recipe really easy to do and takes no time at all. I didn't use a bag of seafood mix I used what I already had at hand which was haddock cut into chunks, muscles, and prawns next time I will use calamari as well maybe instead of the muscles which the wife wasn't fond of

    Yes, it's a pity there isn't more detail than just seafood mix, as I never buy frozen and would like to know what to buy fresh. Anyway I'll experiment - it sounds lovely

    tasty but found mixture a little loose, next time I will go with Nigel and I will try prawns with salmon or haddock and cod for a much firmer texture, other than that lovely and easy to make.

    I used fresh seafood mix pack from fishmongers which was OK but lacked variety- it was basically salmon! Nice dish though, especially since using only 4 lasagne sheets significantly reduces carb content of regular lasagne. Didn't have griddling facilities so grilled courgettes which was fiddly. Assembled dish needed all 30 minutes in oven.
