Method

  1. Mix the eggs and egg whites with some seasoning and set aside. Heat the oil in a medium non-stick frying pan and cook the pepper for 3-4 mins. Throw in the white parts of the spring onions and cook for 1 min more. Pour in the eggs and cook over a medium heat until almost completely set.

  2. Sprinkle on the ham and cheese and continue cooking until just set in the centre, or flash it under a hot grill if you like it more well done. Serve straight from the pan with the green part of the spring onion sprinkled on top, the chopped tomato and some wholemeal toast.

This makes a great breakfast and you definitely don't miss the egg yolks. I found it a useful way to use up some spare egg whites plus other bits in the fridge. I used spring onion and cheese as per the recipe but instead of tomato and ham I used chilli and coriander. It was great!

Lovely for lunch with a handful of grilled cherry tomatoes!! I think I will add an extra egg next time, not enough for two people

Quick and easy perfect start to the day. remember to pop the omelette under the grill for a fluffier omelette. don't take your eyes off of it for a second it only takes a minute.
