Cinnamon porridge with banana & berries

Method

  1. In a medium-sized saucepan, mix the oats, cinnamon, sugar, milk and half the sliced bananas. Bring to the boil, stirring occasionally. Turn down the heat and cook for 4-5 mins, stirring all the time.
  2. Remove and divide between 4 bowls, top with the remaining banana, strawberries, a dollop of yogurt and a sprinkle of cinnamon.

TO OVEN COOK

Heat the oven to 150C/ 130 fan/ gas 2. In an ovenproof dish, thoroughly mix the oats, cinnamon, sugar and the milk. Cover with foil and cook for 45 mins. Remove and stir through half the banana and bake for 15 mins more. Finish recipe as above.

    I would never have thought to include banana in the pan when cooking the porridge, but it works so well. Delicious with the cinnamon too and something I'll definitely make again soon.

    I had this for breakfast this morning and thought it was a delicious and fulfilling way to start the day! I didn't have any strawberries or yogurt in though, so I used honey and raisins as I'm such a sweet tooth. It's a great way to use up your bruised bananas!

    The addition of bananas into the cooking pan is a great idea! I didn't have any strawberries so added some blueberries and omitted the yoghurt. I also cut down on the sugar. Still tasted delicious and indeed a good way to use up those bruised bananas. However, this recipe will never feed 4 if you are feeding a husband and growing boys! I didn't quite double up, just added some extra oats and milk.

    Fabulous breakfast. I substituted unsweetened coconut milk and it's wonderfully creamy. Instead of sugar I used a bit of Stevia and 1/2 tsp of Molasses. Lovely!
