Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 celery sticks, chopped
  • 2 tsp ground cumin
  • 600ml hot vegetable stock
  • 400g can chopped plum tomatoes with garlic
  • 400g can chickpeas, rinsed and drained
  • 100g frozen broad beans
  • zest and juice ½ lemon
  • large handful coriander or parsley and flatbread, to serve

Method

  1. Heat the oil in a large saucepan, then fry the onion and celery gently for 10 mins until softened, stirring frequently. Tip in the cumin and fry for another min.
  2. Turn up the heat, then add the stock, tomatoes and chickpeas, plus a good grind of black pepper. Simmer for 8 mins. Throw in broad beans and lemon juice, cook for a further 2 mins. Season to taste, then top with a sprinkling of lemon zest and chopped herbs. Serve with flatbread.

This soup is delicious, the flavours all work well together! I've made this a couple of times and is great for lunch or dinner in the cold winter months!

I was surprised how delicious this was! I didn't add the broad beans as i'm not a fan but followed the rest of the recipe easily. Excellent!

I made this but added scallops and prawns and it was delicious. Also added the harissa paste. One thing I forgot to do is peel the broad beans...it would have been perfect otherwise!

Really tasty, left out the broad beans and added chorizo, ground coriander seed and a little chillipowder, lovely!

Very tasty ideal for a cold day either for lunch or starter. For dinner we just added chicken which was great and so filling especially if on a diet. Try it now you won't regret it.

Wonderful recipe my husband loved it, made it with frozen soya beans as I didn't have any broad beans and I'll try spinach or kale next time. Also made double the recipe and put it in the freezer - brilliant standby.

Picked this recipe because I was in a rush and it seemed quick, so wasn't expecting great things. Was very pleasantly surprised - a good, tasty, hearty soup that left my housemates demanding more!

Would definitely recommend this and will be making again

Tasty, didn't have any broad beans so went for spinach. Might have overdone it on the chilli, but still tastes great. I also had to cook it for a bit longer than it said.

A really nice receipe that has become a firm favourite for me. I sometimes switch the broad beans for butter beans.. really yummy :-)

Soup lovely I've made it twice since finding the recipe, left out the celery and broad beans didn't have any, I added chopped chorizo sausge gave it a lovely smokey flavour

I am having this soup now for lunch! I made it a couple of days ago and it is absolutely lush!
I added a bit of Ras El Hanout spice mix as well for a real morroccan taste and a tiny bit of chilli powder. Also i didnt have chopped tomatoes with garlic so i used a tin of normal chopped tomatoes and added some garlic puree. Also didnt have broad beans so threw in some fresh runner beans and its fab. Will be making this regularly!

So simple! So delicious!

I added a teaspoon of hot chillie pickle instead of the harisa paste.

Yum yum!

Living with a veggie this was a fantasic find. Makes a brilliant change from the ususal bland stuff I have to make.

Great and simple! I used borlotti beans instead of chickpeas and also added some chopped carrots in with a little bit of corn and a couple of spoons of harissa. Added a piece of really dry prosciutto which had sat in the fridge for about 6 weeks. Served with the Cheesy Garlic bread in this website. All came out good. Great for quick dinner!
