Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 celery sticks, chopped
  • 2 tsp ground cumin
  • 600ml hot vegetable stock
  • 400g can chopped plum tomatoes with garlic
  • 400g can chickpeas, rinsed and drained
  • 100g frozen broad beans
  • zest and juice ½ lemon
  • large handful coriander or parsley and flatbread, to serve

Method

  1. Heat the oil in a large saucepan, then fry the onion and celery gently for 10 mins until softened, stirring frequently. Tip in the cumin and fry for another min.
  2. Turn up the heat, then add the stock, tomatoes and chickpeas, plus a good grind of black pepper. Simmer for 8 mins. Throw in broad beans and lemon juice, cook for a further 2 mins. Season to taste, then top with a sprinkling of lemon zest and chopped herbs. Serve with flatbread.

As I am not a lover of cumin, I did a slight variation of this recipe using Smoked Spanish Paprika Hot (Pimenton De La Vera). Also some girdled chorizo topping this is perfect.

We all loved it! A hearty tasty and well balanced soup.
I made a "not too spicy" version for the children, and older ones added some cayenne pepper, that brought out the tastes wonderfully.

Mmmmmm! I found it a bit thin so I used passata instead of a can chopped tomatoes and half the veg stock, lovely and creamy. I also put a tbsp of harissa spices to give it a kick. Its great if you are calorie counting too!

Very Tasty , warming and filling , I've made this three times in the last 3 week's we all love it ,
It freezes well too, My daughter has just asked me for the recipe , so it's now an all time favourite .....

I really enjoyed this, I'm doing weight watchers and this worked about about 5 points per bowl and it was soooo yummy and quite filling, i had to omit the broad beans as I didn't have any but still really enjoyed it. I have recommended it to all my dieting friends too!

Really nice soup. I will be taking this to work for a hearty lunch. I added chicken to this and like others some harissa for a bit of spice. I also used fresh tomatoes because I am not keen on tinned. It gives it a fresher, cleaner taste, very good.

Really nice & very filling, I did not have any broad beans so used a can of butter beans instead. Also used a chorizo sausage and some smoked bacon that I wanted to use up. Hubby takes this for work and he really loves it.

really tasty soup. used butter beans instead of broad beans and added some chilli flakes. delicious served with garlic bread and glass of red wine!

This was really nice and light for dinner. I left out the celery because I'm not a fan but it didn't seem to make any difference to the end product. Very nice with some bread for dunking in it :)
