Method

  1. Heat oven to 220C/fan 200C/gas 7. Cut the peppers and the onions into chunks. Toss in the oil and dried thyme, then roast for 30 mins until soft and slightly blackened.
  2. Cool, then blend or process until just chunky. Stir through the passata, season and warm through.

    Was really nice with chicken breast, cut into strips and fried in olive oil with some oregano. Ontop of pasta with some grated cheddar on the top.

    I changed this to 1 Red Pepper and 2 Sweet Red Pointed pepers and couple of garlic cloves, used it for som many different dishes. Chicken breast roasted with Garlic new potatos and green beens. Sausage Pasta Pizza etc :)

    This was really quick and easy to prepare and tasted sweet and delicious. Used it as a pasta sauce and even my veg-hating children thought it was delicious! Might add some garlic and possibly a little chilli next time too.

    Lovely and works with just about any veg. I sometimes add a small aubergine and a couple of cloves of garlic to the roasting tray, half a chilli or so in the blender also works well or a splash of balsamic at the end. So much better than ready made sauce and so quick to prepare.

    Really good, easy and healthy recipe. Takes more than 5 mins to prepare though :) Also needs additonal seasoning. I used lots of chilli powder, which worked very well.

    i cooked it on pan in a traditionalway..n added some basil n ginger garlic spread and topped it with mozzarella and mixed with some chicken..tasted good!!

    Easy, tasty and low fat! Much better than opening a jar of pasta sauce. I added garlic and chilli to the peppers and onions before roasting them.

    Not bad little sauce. I served it with Chicken Stuffed with Spinach & Feta and each dish lifted the other one. Not bad experiment all in all!

    I absolutely love this sauce! I live on my own, so I portion it up and bang it in the freezer - perfect just as a pasta sauce with some grated mozzarella on top. Yum!

    Lovely and very easy - one I will add to my repertiore. I added a few cloves of garlic and fresh basil instead of thyme. I made double the batch of sauce and used one portion with pasta and cheese then used the leftover sauce and added mushrooms which was also lovely and had seconds for lunch at work.
