  1. Put a large pan of water on to boil. Heat the oil in a large frying pan and fry the sausage chunks on a fairly high heat until they are golden brown all over. Now turn the heat down and add the onion and garlic, cooking them until they have softened.

  2. Stir in the chilli powder and tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.

  3. Drop the pasta into the pan of boiling water and cook according to the pack instructions. Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

I cooked this to use up leftover cooked sausages. Also added some chopped courgette, and a teaspoon of marmite (I always add marmite to sauces!) and it was delicious!

Very Yummy indeed, I added more garlic, frozen peas, red pepper and a can of tomatoes as well as half a can of water. I then added curry powder and some home grown spinach leaves just scattered on the top of the mixed pasta.
I used the spicy chilli sausages instead of just pork sausages which made it more yummy.
Makes sausages go a long way for a family meal.

add green pepper! its REALLY good with green pepper. and i used red onion to make it more colourful.

easy and simple just what I like. I took the suggestion of cutting the sausages with scissors instead of a knife, which worked fine. I wouldn't want to cook them first as finishing them in the sauce makes them lovely and juicy! the answer from my boys was "more, more!"

Excellent! I made this with what I had in the cupboard. Used smoked sausage and THREE times as much chilli. I only had lasagna sheets so I layered it up and added cheese sause and cheese on top, then cooked in oven. I now call it spicy sausage lasagna! Sooooo tasty and spicy. Will become a regular in my house

Loved this recipe the 1st time. Second time i replaced the chilli powder with 1/2 a birds eye chilli, then added 1 anchovy fillet and a table spoon of tomato puree. We loved it even more.

This may have been said before, but a nice variation on this is to use spicy sausages (e.g. merguez) and a little fresh chorizo (chopped). De-'skin' the merguez before rolling it into mini meatballs. The meal captures the flavour a bit more that way. No real need for curry/chilli powder given the spice in the sausages although I would throw a fresh chilli in also. Finally, you could fry a little pancetta up front and use a red onion as well as the white/plain onion to sweeten this slightly... The pancetta makes it a bit of a hybrid a la matriciana sauce but I think it works well....

Really nice but a little too spicy for my liking so I will use less chilli powder next time. I also added spinach for some vegetables and it worked really well.

quick simple and cheap. i add mixed veg/peppers/sweet corn just to boost the veg content. great for left over lunch the day after. i also cut the sausages with scissors for ease.

A great recipe for beginners. It personally helped me get over my fear of the kitchen. It showed me how easy it is to make a delicious sauce. And really, the first step in cooking in confidence. Even though I'm fully back in the kitchen and cooking away, I still make a version of this most weeks. Yum.
