Method

  1. In a large microwaveable dish, mix the ketchup, vinegar, sugar and garlic thoroughly with the chicken, onion and peppers. Microwave, uncovered, on High for 8-10 minutes until the chicken is starting to cook and the sauce is sizzling.
  2. Stir in the pineapple pieces and sugar snap peas and return to the microwave for another 3-5 minutes until the chicken is completely cooked. Leave to stand for a few minutes, then stir in the cashews, if using, and serve.

    This is absolutely amazing!! Cooked in the wok and it tasted better than any take out we've ever had - we've had it twice this week already!! And its low fat, cheap, and super easy!! Definite winner for us.

    Also made this on the hob, rather than Microwave. Great tasting and quick meal, but will use less sugar next time... it was a bit sweet.

    What a super easy and quick meal to throw together and such a lighter healthier version to take out. I cooked a vegetarian version in the wok with tofu, it turned out a bit too sweet for my liking so next time I will use less sugar, more garlic and a bit of ginger.

    I make this dish a lot and always get great feedback - very simple and delicious! although i agree comments above about cooking it in a wok :) i also add baby sweetcorn in too and lots of red peppers! yum!

    Thought this was delicious. Tasted really fresh and healthy. I was making for 2 people so halved the chicken, pineapple and vegetables but stuck to the quantities for the sauce as i dont like dry dishes. Was yummy!

    This worked so well, fantastic! Did it in the wok too, coated chicken with cornflour and added a bit of ginger and sesame oil. Will definitely become one of our staple dinners.

    Lovely,didn't expect such a good result and the ease of using the microwave made for a really quick,tasty meal. I did use some cornflour to thicken the sauce slightly as I'd used fresh pineapple and juice. Thanks for yet another great recipe.

    Lovely recipe that i adapted slightly. The sauce needs 1 spoon of sugar less, the chicken i coated in seasoned cornflour and fryed (3 batches) until very crispy and then added at the end and dish needs plenty of fresh ginger. I used the wok.

    This was really really easy to prepare. I think it could have done with a bit more cooking as the onions and peppers weren't quite done to my liking. But! A brilliantly easy recipe, and tasted just like one of the sauces you can buy. Loved it.

  • 3 tbsp malt vinegar
  • 4 tbsp dark muscovado sugar
  • 2 garlic cloves , crushed
  • 4 skinless and boneless chicken breast , cut into chunks
  • 1 small onion , roughly chopped
  • 2 red peppers , seeded and cut into chunks
  • 227g 8 oz can pineapples pieces in juice, drained
  • 100g sugar snap peas , roughly sliced
  • handful salted, roasted cashew nuts, optional
