Easy sweet & sour chicken

Method

  1. In a large microwaveable dish, mix the ketchup, vinegar, sugar and garlic thoroughly with the chicken, onion and peppers. Microwave, uncovered, on High for 8-10 minutes until the chicken is starting to cook and the sauce is sizzling.
  2. Stir in the pineapple pieces and sugar snap peas and return to the microwave for another 3-5 minutes until the chicken is completely cooked. Leave to stand for a few minutes, then stir in the cashews, if using, and serve.

    This was fab! I took on board the recommendations to cook it in the wok! I never really liked sweet & sour and now I think it will be one of my favourities!

    This recipe was delicious, i cooked it in the Wok though (only cos i had burnt some chicken as i tried to steam in the microwave a few days previous). My partner was very impressed he said it tasted better than the named jars we usually use and he even ate all the peppers and sugar snap peas on his plate (he does not eat vegetables because he dont like them). I served with noodles and a small portion of Egg Fried Rice.

    Like most of the other people here, i used a wok (well actually a frying pan bit i digress :p). It was lovely. Really light and afterwrds unlike chinese I didnt feel groggy. It was very aromatic and tasted very authentic, it will be definately be made again :)

    Fantastic ,tasty and easy to cook recipe. The whole family loved this and was so much better than a take away. Did cook in a wok though and added some mushrooms, so quick and easy to make.

    Easy, tasty and I did it in the Microwave as I hadn't read the previous feedback and it was great, went down a treat and cooked in the same time as the rice. I've already passed the recipe on! Although, it still doesn't taste totally authentic, probably because its missing the nasty MSG

    This is good! Didn't use the microwave I wok fried the chicken and then added veg and then the sauce ingredients. By chance I didn't have any chicken breast in the house but I had some drumsticks, so I boiled the drumsticks for 30min or untill the meat dropped of the bone and then wok fried it etc. It was fantastic with the brown leg meat! Also used a heck of a lot more garlic and some ginger and a little cayen pepper.

    this was surprisingly easy and tasted lovely. I did cook it in the microwave but didn't use chicken - I added some prawns in the last few minutes of cooking. I also left out the nuts and used fresh pinapple- lovely with noodles.

    I have just turned this out of the pan - wow!! Lovely! Scaled down the recipe as I only had one chicken breast, and didn't have any snap peas so used broad beans instead! Still tastes lovely, and enough for two people!! I also boiled the chicken first in chicken stock which I find keeps it moist and you can guarantee it is cooked through, without over cooking the other ingredients as I did it in a wok - not the microwave! I have also made extra sauce for dipping with many other delish recipes!!
