Method

  1. In a large microwaveable dish, mix the ketchup, vinegar, sugar and garlic thoroughly with the chicken, onion and peppers. Microwave, uncovered, on High for 8-10 minutes until the chicken is starting to cook and the sauce is sizzling.
  2. Stir in the pineapple pieces and sugar snap peas and return to the microwave for another 3-5 minutes until the chicken is completely cooked. Leave to stand for a few minutes, then stir in the cashews, if using, and serve.

    Didn't use microwave and added a splash of water. Was really tasty - very quick and as others have said better than the gloopy takeaway!

    I made this for the first time last night for my partner and we really enjoyed it. I did not use the microwave, instead I sealed the chicken in a pan and put it in oven proof dish with all the ingredients including the sauce and put it in the oven for 15-20 minutes and was lovely, definitely having this again.

    I was sceptical about this as I don't like tomato ketchup or vinegar but was swayed to try as so many 5 stars, also looking for recipes for 18 yr old son to cook. As others, I cooked in frying pan, chicken first then everything else in plus baby corn. Absolutely FAB, well done Good Food as always. (forget the microwave though). Definitely having this again, may add a bit of ginger & chilli next time

    awfully sweet! will try it again with less sugar- otherwise this was a hit. My husband really liked it, but the sweetness did kind of stick to the mouth. Worth trying though, if you haven't done so!!

    Loved this one. Was really easy and delicious. I also cooked this in a wok I cooked the chicken for a few minutes then added the other ingredients leaving the pineapple and sugar snap peas later.

    I cooked this in the wok. This must just be me, but it was way, way too sweet, even using half the suggested sugar. I had to add stock, soy sauce & worcester sauce. However, the meal looked attractive and I will use the suggested vegetables & nuts with another sauce.

    Made this recipe for first time after reading comments. Fabulous! My husband is not a sweet and sour fan but he loved this recipe. I added finely chopped chillies and spring onions when serving. I have a 24yr old daughter with a severe food allergy (nuts) so I look for recipes she can tolerate. This fits the bill perfectly! I used the wok tho. Cooked chicken, onion and garlic to fry then added sauce,peppers and pineapple. Served with noodles, egg fried rice and a spring roll. Hubby said 'you can do this again. It's better than takeaway'. Doing it for a family get together soon cos it so easy!!!!!

    Tried this for the first time and was a unsure about using the microwave but as I was short on time I did and it worked perfectly! Delicious dish enjoyed by myself and my husband. Served with brown rice. Didn't have sugar snap peas so added peas. Will cook this again.

  • 3 tbsp malt vinegar
