Method

  1. In a large microwaveable dish, mix the ketchup, vinegar, sugar and garlic thoroughly with the chicken, onion and peppers. Microwave, uncovered, on High for 8-10 minutes until the chicken is starting to cook and the sauce is sizzling.
  2. Stir in the pineapple pieces and sugar snap peas and return to the microwave for another 3-5 minutes until the chicken is completely cooked. Leave to stand for a few minutes, then stir in the cashews, if using, and serve.

    Didn't like the idea of cooking meat in microwave, so adapted the recipe and cooked it in the wok instead. Loved the sauce and this tasted fresher and better than any takeaway !! Served this with plain rice - we actually cooked this dish faster than it took the rice to cook !!

    Brilliant failsafe dish - Very quick and you can really chuck in any veg you want. I make this using quorn chicken style pieces and serve it with egg noodles - very nice.

    Very quick and easy, better than a take away, however did cook it in a wok rather than microwave also served it with noodles. My family have requested this again.

    I made this with my daughter ( a university student) as it is her favourite meal. We made it in a wok not a microwave and it was absolutely fantastic. She can't wait to get back to her student house to make it for her housemates. Much nicer than takeaway and so, so, so simple. Mix it all together and throw it in a wok!

    Was dubious about using a microwave but trusted the recipe - my son got very ill from the meat being undercooked, even though I checked lots of pieces as was concerned. It just doesn't cook in an even way in a microwave. I suggest making it in a wok!!

    It's bubbling away in the wok as I type (didn't like the microwave idea either!)...so quick and simple and tastes great. Really fresh tasting..less gloopy (that's a good thing!) than takeaway and better than any jar. Added some baby sweetcorn too. A definite "will make again"!

    Such a quick, simpy and totally delicious recipe!! Like most other, I used a wok (dont really like using microwaves for anything other than reheating soups, stews, mugs of tea etc) and threw in some baby sweetcorn too. Served it with Egg Fried Rice, with a splash of soy, seasame oil and finely shredded spring onions. This will be a regular - much better and quicker than a takeaway!!
