Tuna sweet potato jackets

If your standby supper is baked potatoes with tuna, switch to sweet potatoes and a fresh, spicy topping - budget-friendly and low-fat too

Method

  1. Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.
  2. Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.

To make a veggie version of these jackets, swap the tuna for some crumbled feta.

    Surprisingly good! I added chilli oil instead of peppers and it turned out REALLY good! This is very unusual combination, but it's quick, healthy and delicious - I will definitely cook it more often from now on!

    I loved this, thought it was delicious. I mixed the tuna, chilli and chopped up the onion and then topped it with everything else and added some feta cheese too. Will only ever do sweet potato jackets again, so much tastier! I did 2 in the oven for 45 mins as i always prefer the taste & texture this way to microwaving.

    This is absolutely yummy. I didnt have high epectations the first time I made it but the flavours are amazing together. Healthy, delicious and sooo easy. What more do you need?!

    This is one of my favorite recipes! I love the sweetness of the sweet potato, the zesty taste of the lime, the salty flavor from the tuna, the fresh taste from the yoghurt, the chili makes it hot and the onion gives it a depth of flavor! Great recipe!

    This was fantastic. I baked the potatoes conventionally, and I mixed the tuna, red onion, chilli and lime juice before adding to the sweet pots. I also put the tub of yoghurt on the table for people to add more if they wanted. The combination of flavours was fabulous. I had some avocadoes to use up so just put some lime juice over them and served them on the side. Fab meal, enjoyed by the whole family.

    Don't have a microwave so cooked the potatoes for 45 mins in the oven- so its not quite a quick after work supper for me. It was a very nice meal, enjoyed the flavour combo, will make again

    This was so quick and simple! I did it a little differently and mixed the tuna and other ingredients together, I also used spring onions instead of the red onions and cherry tomatoes. Healthy, yummy, cheap and minimal washing up! A winning combination if you ask me =]

    This really didn't work for me. I was really looking forward to trying this, but the combination of tuna and sweet potato with those somewhat asian flavors did nothing for me.

    A very nice lunch dish, as it is extremely easy and can be altered to suit your tastes. I have made it both as the recipe instructs and with alterations, such as using cream cheese mixed with the tuna and adding some paprika. It also makes a nice alternative to your average jacket potato!

    Very tasty & so very good for your health. Thought the combo of ingrediants was unusual but I'm focusing my diet around foods that are believed to have anti-cancer properties & odd as it sounds, this recipe ticks all the boxes. So glad I tried it. The sourness of the lime & saltiness of the tuna work really well against the sweet potato and the chilli & onion add that bit of texture against the softer ingredients. Will definately be making this a regular favourite.

    Really nice, quick dinner! I replaced the red onion with spring onion, skipped the coriander (not a fan) and sprinkled the yoghurt topping with paprika. Very tasty!
