Tuna sweet potato jackets

If your standby supper is baked potatoes with tuna, switch to sweet potatoes and a fresh, spicy topping - budget-friendly and low-fat too

Method

  1. Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.
  2. Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.

To make a veggie version of these jackets, swap the tuna for some crumbled feta.

    Very nice! The first time i made this i was a bit wary as i wasn't sure if the flavours would all go together but it was gorgeous! A really good, low fat dish....i'm making it again tonight! :)

    Anyone watch Hugh Fernely Whittingstalls Fish fight on Channel 4 last week or seen the Greenpeace tinned tuna league table? http://www.greenpeace.org.uk/tunaleaguetable Make sure you use pole and line caught tuna for this dish rather than that has been caught using large nets which kill dolphins, turtles and sharks as by-catch. pole and line tuna can be found at Sainsbury's, marks & spencer and waitrose but unsure about the others...

    Have made this a few times now. It's cheap and easy and I love sweet potato. The lime makes a lot of difference and the greek yoghurt is a must!

    I absolutely love this recipe. It's so simple and as a student is a great alternative to the normal jacket potato. I didn't have yogurt so improvised with salsa, mayonnaise and sour cream and onion dip, having a section of each. I must say that both the salsa and sour cream dip add that extra dimension that you don't get from yoghurt. Definitely worth trying!

    umm . not sure i got this right. Sweet potatoes had odd texture, coriander was not as strong tasting as I've had before n chilli ghad no kick! I may try again, but instead i'll steam sweet pototoes, test coriander before i buy n get stronger chilli. I like the combo of tuna lime n yogurt though.

    I thought this might be a bit dry so I mixed the ingredients up with a table spoon of the yogurt then served with extra yogurt onion slices and lime juice. It was fabulous, tangy, sour, fishy, creamy balancing beautifully with the sweet potato....yummy

    18-20 mins is a bit over-kill! They'll do in much less in a microwave, even a low wattage one! Happily, sweet potatoes cook more speedily than regular potatoes -- what's not to like!? They're almost always the better option! And GREAT with something a little salty-sour like tuna!
