Ingredients
- 300g dates,
- 12 fl ozs water,
- 2 eggs,
- 80g clover lighter,
- 300g wholemeal self/raising flour,
- 1 tsp mixed spice,
- 1 tsp cinnamon,
- 100g chopped walnuts,
- splash of milk.
Method
- STEP 1Put the dates and water into a bowl microwave cook
- STEP 2until the dates are sloppy [about 3 mins] Let them
- STEP 3cool until nearly cold [put the bowl into a bigger bowl
- STEP 4of cold water dont let any water get into the mix]
- STEP 5Beat the clover until creamy,add the 2 eggs and mix
- STEP 6[it is better with an electric hand mixer] the mix looks
- STEP 7like it has curdled,stir in the chopped walnuts,flour,
- STEP 8and the spices,add the date and water plus the milk,
- STEP 9mix well.Spoon the mix into 2 1lb loaf tins and bake
- STEP 10on gas mark 4 for approx 40 mins,it should be springy
- STEP 11to the touch.Leave to get cold and slice.Loaf can be
- STEP 12frozen for 1 month.
