Trout with green beans & almond butter
A classic fish dish that makes the perfect speedy after-work supper

- Bring a pan of water to the boil, then simmer the beans for 3 minutes until just tender. Drain. Meanwhile, heat a non-stick frying pan. Season the fish, then fry skin-side down for 4-5 minutes until the skin is crisp underneath and the flesh is cooked almost all the way through. You won't need to add any fat to the pan. Flip the fish over and cook for 1 minute more.
- Pile the beans onto warmed plates. Top with the fish. Add the butter to the pan and let it melt. Once it foams, add the almonds and let the butter turn golden. Season with a squeeze of lemon juice (it will foam up), then salt and pepper. Spoon the buttery almonds over the fish and beans to serve.
