Hot salami calzones

Calzones are folded-over pizzas where the filling is cooked inside the dough, they make a good-value midweek meal

Method

  1. Make the ciabatta dough following pack instructions.
  2. Heat 2 tbsp olive oil in a pan. Add the garlic and chilli flakes, then cook gently for a couple of minutes. Tip in the drained tomatoes and press down. Stir in the sugar then simmer for 10-15 minutes, until thickened. Season and add the basil. Cool.
  3. Cut the dough in 2, then roll each piece into a thin circle. Spread a thin layer of sauce over the circles, then scatter half of each with the cheese, salami and olives. Fold each over so you end up with 2 half-moons. Make a seal by twisting and folding the edges over. Put on a baking sheet, slash the tops a couple of times, then leave for another 10 minutes.
  4. Heat the oven to 200C/fan 180C/gas 6. Dust the calzones with flour and bake for 15-20 minutes, until golden and puffed up.

    I love Calzone pizza l have made my own before with ham and mushroom and mozzorella.They make a change from the normal pizza. I will try this one tomorrow.

    Well, I tried them and they were delicious, but... the recipe says make up the bread mix as stated on the packet. Fine, but up to what point? Mixing took only a few minutes, but then there's 10 minutes kneading and an hour's rising. At what point do you stop following the pack instructions? I left the dough to rise then knocked it back, but it was still very stretchy and hard to roll. My calzones finished up as odd shapes but I thought they looked much more appetising than the ones in the picture.

  • 1x400g tin plum tomatoes , drained of juice

  • small bunch basil , chopped
  • 1 ball mozzarella , sliced
  • 1 pack salami , approx 70g
  • 10 black olives , halved
