Spiced rice with prawns

Straight-from-the-wok spicy supper with rice, prawns and bacon - ideal for Autumn evenings

Method

  1. Tip the rice into a pan of boiling, salted water and simmer for 10 minutes, adding the peas for the last 3 minutes. Drain well.
  2. While the rice is cooking, heat the 2 tablespoons of oil in a large frying pan or wok. Add the onion and bacon and stir fry for 3-4 minutes, until the onion starts to turn golden and the bacon begins to cook. Stir in the curry paste and cook for a few seconds, then tip in the prawns and heat them through for a minute or so.
  3. Push the prawn mixture to one side of the pan and add the drop of oil to the other side. Pour the egg into the oil, stir until cooked like scrambled eggs, then mix into the prawns. Add the rice and peas and mix well. Serve immediately, with soy sauce for sprinkling, if you like.

    did with prawns scallops and salmon but far too salty.Always forget about bacon.too much activity required in kitchen too for my liking mid week.

    Works equally well with mushrooms instead of peas. Also I tend to miss out the bacon as it doesn't really add anything (except calories!)

    A very nice dinner, easy and quick to do! I've cooked this recipe twice now, with the bacon and without and I found no real difference. I think I might add a few mushrooms next time or possibly some ham!

    Really quick and simple to make. I adapted the recipe as I was just making it for myself and made it without the prawns because I dont like them but I still found it really tasty. It would also be good with chicken if like me you're not keen on seafood.

    Made this for me and my boyfriend and it was delicious! When I read the recipe I was unsure of the bacon but as I had a pack open in the fridge I put it in and it was definitely the right choice. :) I used balti paste instead of masala and put 2 tbsp in as we enjoy our spices. I've never made a meal with prawns before yet I loved them and this will definitely be a regular for us now.

    I have made this a couple of times now using uncooked prawns which i have stir fried with the bacon . Quick and delicious - an ideal mid week family recipe.

    This is sooo good! Mine was saltier than I would normally like, but I think it's partly because I used tandoori paste rather than tikka paste. I made a couple of edits, I increased the veggie count by adding chopped carrot and red pepper, and I used turkey bacon instead of normal bacon. Very quick, very easy and very tasty.   • 200g long grain rice
  • 175g frozen peas
  • 2 tbsp oil , plus a drop extra
  • 1 onion , chopped
  • 3 rashers streaky bacon , chopped
  • 1 tbsp tikka masala curry paste
  • 250g peeled cooked tiger prawns , thawed if frozen
  • 1 egg , beaten
  • soy sauce , to serve
